If you are using their webbuilder software, then you have to live with the background choices you are given.

You don't have to use their webbuilder software, but that means you'll need to use some Website creation software.

I'd suggest Kompozer if you want easy and free on the Window's platform. I've also used SiteSpinner but it isn't free or quite as easy for beginners.

SiteSpinner has a "Publish" feature. It will publish to your hard drive and, if configured with all the FTP settings, it will publish to 1&1.  You just need the "Uxxxxx" number for your account and the password to authenticate.

Personally, I "publish" to my hard drive, then use CuteFTP to manually upload my files to 1&1. Either way works.
